Baked Potato Halves with Cheese and Egg

100 g Cheese, edamame

Preheat the oven to 200 degrees Celsius. Wash the potatoes thoroughly under running water (scrub if necessary) and dry them with paper towels. Pierce the skin several times along the length with a fork, lightly coat with oil, and sprinkle with salt.

Arrange the potatoes on a rack and bake in the preheated oven in the middle position for 30 to 40 minutes. They are done when the potato flesh inside is completely soft (you can check this by inserting a thin knife into the potato - if it pierces easily, the potato is baked).

While the potatoes are baking, peel the garlic and onion, and finely chop them separately. Melt butter in a pan and sauté the chopped onion in it. Add the garlic and cook for another minute - just enough for the garlic to become fragrant. Remove from heat and let cool.

Once the potatoes are baked, remove them from the oven. Let them cool slightly, then cut them in half lengthwise. Use a spoon to remove the baked potato flesh, leaving about half a centimeter thick wall. Add the scooped-out flesh along with grated cheese and sour cream to the pan with the onion and garlic. Season with pepper and salt to taste, and mix everything until smooth.

Place the hollowed-out potato halves in a baking dish and fill them with the potato mixture. Use the back of a spoon to create small wells in the mixture, crack eggs into them, and lightly season with salt and pepper. Sprinkle with chopped chives and return to the preheated oven for 10 to 15 minutes.

Serve the baked potato halves on plates. A large bowl of salad pairs wonderfully with them.
