Beef Patties in Pepper Cream Sauce

Ingredients
- 
800 g Meat, beef, fillet - lung roast 
- 
30 g Butter, unsalted 
- 
1 piece Onion, raw 
- 
2 spoons Alcohol, Brandy 
- 
2.5 dl Soup base, beef, cube 
- 
125 ml Sweet cream 
- 
3 spoons Spices, pepper, black 
- 
1 pinch Salt, table 
- 
1 pinch Spices, pepper, black 
Steps
- 
Peel, wash, and finely chop the onion. Thoroughly clean the beef fillet and cut it into 4 patties. Drizzle them with a tablespoon of olive oil and season both sides with pepper.

Heat a pan and melt the butter in it, being careful not to let it brown. Place the patties on the heated butter and sear them on both sides. Cook for 5 minutes on each side. Season the cooked patties with salt and transfer them to a plate.

Add the onion to the pan. Sauté it over moderate heat for 5 minutes, then deglaze with cognac. While slowly stirring, add the sweet cream and continue to stir until the cream comes to a boil. Then pour in the broth and add green pepper. Increase the heat slightly and let it simmer until the sauce thickens slightly. Remove the pan from the heat.

Place the seared patties into the pan with the sauce and let them sit in the sauce for 5 minutes to absorb the flavors. Serve warm with the sauce.
