Coffee Cookies
Cookies with a rich coffee flavor. They are so delicate and buttery that they melt in your mouth. Serve them with a warm beverage, but they are best enjoyed with a cup of good coffee.

Ingredients

250 g Butter, unsalted

100 g Powdered sugar

30 g Cocoa, powdered, unsweetened

250 g Wheat flour, white, multi-purpose

100 g Sugar, white

30 g Coffee, espresso

Using an electric mixer, beat softened butter and sugar until smooth and creamy.

Sift flour and cocoa powder over the butter mixture. Mix well until you get a uniform and nicely brown-colored dough. Let the prepared dough rest for a few minutes.

While the dough is resting, prepare the coffee sprinkle. In a bowl, mix sugar and ground coffee. Make sure both ingredients are well combined. Preheat the oven to 170°C (340°F) and line a baking sheet with parchment paper.

Divide the dough into three equal parts. Sprinkle one-third of the coffee sprinkle evenly on a clean work surface. Place one-third of the dough on the sprinkle and roll it into a long log, about 3 cm thick. Repeat the same process with the remaining two parts of the dough. Place the prepared logs on the baking sheet and refrigerate for one hour.

Using a sharp knife, cut the chilled logs into half-centimeter thick cookies. Arrange the cookies on the baking sheet. Make sure to leave some space between them so they don’t stick together while baking. Bake the cookies in the preheated oven for 20 minutes.

The baked cookies are very delicate, so let them cool completely on the baking sheet first. Once cooled, carefully transfer them to a plate or a container. Serve with a cup of coffee.
