Creamy Orzo Pasta with Zucchini and Carrots
Orzo are small Italian pasta shapes that resemble rice grains. They are also known as pastina or risoni. Orzo pasta can be cooked in soup or served as a side dish with meat in sauce, but you can also quickly prepare a delicious dish that closely resembles creamy Italian risotto.

2 spoons Oil, vegetable oil, canola

2 pod Garlic, fresh

1 piece Small pumpkins

450 g Pasta, Macaroni

1 l Soup base, chicken, cube

Steps

Wash the zucchini and carrot, peel them, and grate them. Peel the garlic and finely chop it.

Heat olive oil in a deep pot and sauté the chopped garlic, grated carrot, and zucchini for 2 minutes. Add the dry pasta and continue to sauté everything together for another 2 minutes while stirring.

Pour the broth into the pot and add the grated lemon zest. Bring the mixture to a boil, then reduce the heat to medium and cook the dish for another 10 to 15 minutes, or until the liquid is absorbed and the pasta is tender. Season with salt and pepper to taste.

Once the pasta is tender, remove the pot from the heat and stir in the mascarpone. Serve the dish on plates and enjoy.
