Ingredients

500 g Potatoes, white 
- 
50 g Butter, unsalted 
- 
pieces Salt, table

3 pieces Egg, fresh 
Steps
- 
Peel the potatoes and cut them into cubes, then boil them until soft in salted water. Drain the cooked potatoes well, transfer them to a warm pan, and let the excess moisture evaporate.

Press the potatoes through a sieve to obtain a smooth puree, then add butter. Season to taste with salt, pepper, and nutmeg, mix well, and let the puree cool.

Gradually add beaten eggs to the cooled puree and mix until you have a completely smooth and fairly thick mixture. Transfer the mixture to a piping bag fitted with a decorative star tip. Pipe the mixture into neat mounds onto a baking sheet lined with parchment paper. Bake in a preheated oven at 200 degrees Celsius until golden brown (10 to 15 minutes).
