Warm Spinach Salad with Pine Nuts

Ingredients

1 kg Spinach, raw

2 spoons Oil, olive

1 piece Bell pepper, red, fresh

100 g Meat, pork, smoked ham

1.5 spoons Raisins

2 spoons Pine nuts

2 teaspoons Juice, lemon

Steps

Thoroughly wash the spinach and remove the long stems. Fill a large pot two-thirds with water and place it on the stove. Wait for the water to boil. Meanwhile, zest one lemon and add lemon juice, olive oil, a pinch of pepper, and salt to prepare the salad dressing.

Add the spinach to the boiling water and cook for 3–5 minutes, or until the leaves wilt. Drain the water and thoroughly strain the spinach. Meanwhile, thoroughly wash the bell pepper, remove the seeds, and cut it into small pieces. Also, cut the ham into smaller pieces.

Place a pan on the stove and heat a little oil. Add the ham cubes, raisins, and pine nuts, and lightly sauté everything. Then add the spinach and mix well. Cook for a few additional minutes over medium heat while stirring.

Remove the pan from the heat and transfer all the ingredients to a larger bowl. Pour the salad dressing over it and mix well again. Serve the warm spinach salad immediately.
