Yogurt Slices with Fruit and Biscuits (No-Bake)
On summer days, we often seek to cool down and refresh ourselves by heading to the beach or cooling off in rivers and lakes. In the evening, when we return home and reflect on the day, something sweet, light, and refreshing is just what we need. If we don’t have to turn on the oven, even better. The ingredients for these refreshing yogurt slices with biscuits and fruit are mostly things we already have at home, and the preparation is suitable even for beginners.

2 piece Gelatin powder, unsweetened
Yogurt cream

7 dl Yogurt, plain, from whole milk

2 dl Sweet cream

5 spoon Sugar, white

20 g Gelatin powder, unsweetened
Steps

Pour lukewarm milk into a shallow bowl, and optionally add a bit of rum for flavor and aroma. Prepare a baking dish or container in which you will assemble the dessert. Soak the biscuits in the milk and arrange them side by side to completely cover the bottom of the dish/container.

Soak the gelatin in cold water. Lightly whip the sweet cream.

Take a deciliter of yogurt and heat it in a small pot until almost boiling. Place the remaining yogurt in a bowl and add sugar to it.

Drain the soaked gelatin and add it to the pot with the hot yogurt. Remove from heat and mix well until the gelatin dissolves.

Strain the mixture with gelatin and yogurt through a sieve into the bowl with the cold yogurt and sugar. Mix well to ensure the gelatin is evenly distributed. Gently and slowly fold the whipped sweet cream into this mixture in batches using a spatula.

Pour the prepared cream over the soaked biscuits. Refrigerate for a few hours to allow the cream to set.

Prepare a topping from berries. Soak the gelatin in cold water. Add sugar to the fruit and bring it to a boil on the stove. Cook for a short while to soften the fruit, but be careful not to overcook it. Add the drained gelatin to the hot fruit and mix until it completely dissolves.

Once the topping has cooled to lukewarm, pour it over the yogurt cream. Chill the dessert overnight in the refrigerator.

Before slicing, decorate the dessert with fresh fruit and/or fresh mint or lemon balm leaves as desired.
